Monday Menu in the Village

It's Monday it's also Lent, Easter here in Greece this year May 1st.....

Today our menu was Fakes (Lentil Soup).

Made with medium size Green Lentils -  no need to soak overnight, Spring onions, Celery and Bay Leaves from garden add fresh tomato, onions, garlic, carrots and boil for approx 1 hour.  then add salt, pepper, vinegar and of course your own Olive Oil......... (we cheat and have Feta Cheese) and serve with Village Crusty bead and Olives.

Made a whole pot so no need to cook anything again for Tuesday lunch........
